Apple & Strawberry Compote
Serves 1(can be doubled up for more)
Ingredients
- 1 Cooking Apple, peeled and Chopped
- 6 Strawberries , Washed, hulled and sliced in quarters
- 5 tbsp of cold water
- 20g Light brown Sugar
To Serve
Half of a cooked Sheet of ready made puff pastry & Greek Style Yoghurt or Ice Cream
Method
- In a large pan, place the apples, water and sugar and place on the hob on medium heat
- Bring to the boil then simmer, stirring occasionally to the apples start to soften a little
- Add the strawberries, stir occasionally making sure they don’t stick to the bottom of the pan, add a little more of the water to make sure the sugar is dissolved
- After 3-5 minutes the fruit should be soft, but not mushy
- Serve hot or cold with Greek Style Yoghurt or Ice Cream.
