Food - Recipe - Lemon & Mint Cheesecake

Another recipe to use up all the items in my fridge before going to Las Vegas for a week of sun and relaxation

Lemon & Mint Cheesecake

 • Preparation time: 10 minutes
Makes: 1


  • 3 Digestive biscuits
  • 25g unsalted butter, melted
  • 25g soft cheese
  • 1/2 tsp Vanilla Extract
  • 2 dessert Spoons Caster Sugar
  • 1/2 tsp Lemon Juice 
  • Handful of mint leaves, Snipped 
  • Fresh Fruit and icing Sugar to decorate 


  1. Meanwhile, crush the digestive biscuits into fine crumbs –bash in a sandwich bag with a rolling pin – and mix with the butter. Divide into a ramekin or glass, lightly pressing down with the back of a spoon. 
  2. Whip together the soft cheese and the remaining ingredients apart from the fruit. Spoon over the biscuit bases, top each with the fresh fruit and icing Sugar, then serve.
