Recipe - Red Velvet Cupcakes

Red Velvet Cupcakes


Since been back from the USA, I wanted to do an American bake, finally agreeing on these lovely cupcakes, mine turned out more brown than red!!!

Prep time: 15 mins
Cook time: 15 mins
Serves: 12  

Ingredients

Cupcakes

  • 125g Plain Flour
  • 100g Condensed Milk 
  • 1 egg
  • ½ tsp Vanilla Extract 
  • 85g Buttery Spread (I used the Stork with Butter Spread)
  • 1½ tsp Baking Powder
  • 2 tbsp Cocoa Powder 
  • 5-6 tsp Red Food Colouring 

Cream Cheese Frosting 

  • 200g Icing Sugar 
  • 55g butter, softened
  • 1/2 tsp Vanilla Extract 
  • 1-2 tbsp Condensed Milk 
  • 85g full fat cream cheese
  • 6 Strawberries sliced in half to decorate

Equipment

  • 12 hole cupcake tin and cupcake cases
  • Medium Bowl *2
  • Wooden Spoon 
  • Metal Spoon 
  • Cake Tester
  • Cooling Rack
  • Palette Knife




Method

  1. Preheat the oven to 180°C, (160°C for fan ovens), Gas Mark 4.
  2. Place the cupcake ingredients in a bowl and beat until light and fluffy
  3. Spoon into the cupcake cases and bake for approximately 15-18 minutes until springy to the touch and golden brown. Cool slightly then transfer to a cooling rack to cool completely
  4. Beat the icing sugar, butter and vanilla with the condensed milk and cream cheese until very thick and creamy. Spread or pipe onto the cakes
