Recipe - Leek & Salmon Pie

I was lucky to get my first blogging assignment on behave of British Leeks to produce a recipe that involved Leeks, so after some though I came up with this quick cheats pie 

 Leek & Salmon Pie


Preparation time: 30 minutes 
Cooking time: 30 minutes 
Total time: 1 hr

 Ingredients 

  • Half a pack of Ready Made Puff Pastry 
  • 1 Leek, chopped in rings 
  • 1/2 Pack of smoked Salmon Trimmings 
  • 1/2 Red Pepper, Chopped 
  • 1 Carrot, Peeled & Chopped 
  • 1 pack of White Sauce, made to pack instructions 
  • Grind of Black Pepper & Salt 
  • Milk to brush the top of the pie 

Equipment 

  • Rolling Pin 
  • 1 large Saucepan 
  • Measuring Jug
  • Pie Dish Rolling pin 
  • Pastry brush 
 

Method 

  1. Pre-heat the oven to 220°C/200°C Fan / Gas Mark 6 
  2. Butter a pie dish 
  3. In a Saucepan fry in 1tsp of olive oil, the leeks, carrot and peppers till soft, then add salt and pepper 
  4. Add the white sauce and the salmon and stir, add more seasoning if it needs it and mix it all together. 
  5. Roll out the pastry to the thickness of a £1 coin on a floured surface, measure it against your pie dish to see if it’s going to fit. 
  6. Place the veg & fish mixture into your pie dish spreading the mixture evenly out 
  7. Place the pastry on top, and trim the edges, if you have spare pastry left over you can use it to make a Christmas tree or stars rolling it out again and using cutters and placing these on top of the pastry 
  8. Brush the pastry with milk 
  9. Bake in the oven for 30 minutes till pastry is golden.
  10.  Serve hot with green vegetables 

Other meats could be used for example, leftover Turkey and ham, or bacon
