Apple & Strawberry Compote

Hi everyone my first recipe on here!! As spring is coming into full prominence, it's time for all the British fruit to come into flourish. I love apples esp. cooking ones for making compotes to crumbles. This recipe is simple and can be served with anything I did it with a pastry bottom with layers of fruit and Greek-style yoghurt 

Prep Time: 15 minutes
Cooking Time: 15 minutes
Total - 30 minutes
Serves 1(can be doubled up for more)

Ingredients

  • 1 Cooking Apple, Peeled and Chopped 
  • 6 Strawberries, washed, hulled and sliced in quarters 
  • 5 tbsp of cold water 
  • 20g Light brown Sugar 

 Method

  1. In a large pan, place the apples, water and sugar and place on the hob on medium heat 
  2. Bring to the boil then simmer, stirring occasionally to the apples start to soften a little 
  3. Add the strawberries, stir occasionally making sure they don’t stick to the bottom of the pan, add a little more of the water to make sure the sugar is dissolved
  4.  After 3-5 minutes the fruit should be soft, but not mushy 
  5. Serve hot or cold with Greek Style Yoghurt or Ice Cream.

For this dish I calculated that this had about 45g of carbohydrate so for this, so for a Type 1 diabetic on a Short-Acting insulin Regime with 10g of carbohydrate to 1 unit of insulin, this would require 4 or 5 units of insulin.
