Food - Recipe - Raspberry & White Chocolate Blondies

I want to really do my first bake for this blog, but I had a decision which to do first brownies or biscuits. So, in the end, I choose brownies! You can use butter for this recipe, but I choose margarine instead to save time!

Raspberry & White Chocolate Blondies

Prep Time: 20 minutes
Cooking Time: 30 minutes
Total Time: 50 minutes
Makes 12

Ingredients

  • 150g Margarine
  • 200g White Chocolate, Broken
  • 200g Caster Sugar
  • 2tsp Vanilla Extract
  • 3 Medium Eggs
  • 200g Plain Flour
  • 1tsp Baking Powder
  • 75g White Chocolate Chips
  • 150g Raspberries washed

Method

  1. Preheat oven to 180°C (160°C fan) Gas Mark 4. 
  2. Grease your brownie tin or as I'm using my Mini Traybake Tin 
  3. Place the chocolate in a microwaveable bowl with the margarine, and heat in 30 second periods (about 1 1/2 minutes on an 800w microwave), till the chocolate and margarine mixture has melted, set aside to cool 
  4. Beat in sugar, vanilla and eggs until combined to the chocolate mixture. Sift over flour and baking powder, then fold through most of the chocolate chips and half of the raspberries 
  5. Spoon into your pre-greased tin, adding the remaining chocolate chips and raspberries on the top 
  6. Bake for 25/30 minutes,  or till firm and when a cake tester comes out clean. 
  7. Leave in the tin before turning out, or slicing into squares

Nutrition

For this dish I calculated that this had about 45g of carbohydrate so for this, so for a Type 1 diabetic on a Short-Acting insulin Regime with 10g of carbohydrate to 1 unit of insulin, this would require 4 or 5 units of insulin.
