Another recipe to use up all the items in my fridge before going to Las Vegas for a week of sun and relaxation
Lemon & Mint Cheesecake

Makes: 1
Ingredients
- 3 Digestive Biscuits
- 25g Unsalted Butter, melted
- 25g Cream Cheese
- 1/2 tsp Vanilla Extract
- 2 Dessert Spoons Caster Sugar
- 1/2 tsp Lemon Juice
- A handful of Mint Leaves, Snipped
- Fresh Fruit and Icing Sugar to decorate
Method
- Meanwhile, crush the digestive biscuits into fine crumbs –bash in a sandwich bag with a rolling pin – and mix with the butter. Divide into a ramekin or glass, lightly pressing down with the back of a spoon.
- Whip together the soft cheese and the remaining ingredients apart from the fruit. Spoon over the biscuit bases, top each with the fresh fruit and icing sugar, then serve.

For this dish I calculated that this had about 50g of carbohydrate so for this, so for a Type 1 diabetic on a Short-Acting insulin Regime with 10g of carbohydrate to 1 unit of insulin, this would require 5 units of insulin
