Food - Recipe - Matchpoint Pavola

Hi guys I have been so busy that I have had not a lot of time to bake or when I did they did not go well :( So I decided to do a quick pudding to celebrate the tennis (or I bought a Matchpoint Fruit salad from the Sainsbury's that was reduced to Clear, along with some Coconut Pieces, Extra Thick Cream and Meringue Shells)

 Matchpoint Pavlova 

Serves 2
Prep Time: 5 minutes 
Total: 5 minutes

 Ingredients 

• 1 Matchpoint Fruit Salad (or similar fruit salad with mixed Summer fruit) 
 • 1 packet of Coconut Pieces (about 100g)
• 2 Meringue Nests (I have pre-bought ones you can make yourself with you wish!) 
• 1 Pot of extra Thick Cream  (about 300ml)

Method 

1. Place the Meringue nests on a plate, add a massive spoon of cream on top of the nests, you can two or three depending on how much cream you want! 
2. Add the fruit salad on top making sure you have an even amount of the strawberries, cherries and melon 
3. Place the coconut pieces the spaces where there is no fruit 
4. Serve

  • 100g Coconut Pieces
  • 2 Meringue Nests (I have pre-bought ones you can make yourself with you wish!)
  • 300ml Extra Thick Cream

For this dish I calculated that this had about g of carbohydrate so for this, so for a Type 1 diabetic on a Short-Acting insulin Regime with 10g of carbohydrate to 1 unit of insulin, this would require 6 or 7 units of insulin.
