Food - Recipe - Brillant Bacon & Courgette Pasta

I'm back making food for my blog - gasp!! I was sorting through some papers of recipes I had pulled out of magazines over the years, chucking out ones that were no longer needed, I came across this recipe from Jamie Oliver’s Sainsbury’s campaign to Feed your Family for a fiver, I had done this once before and added extras to the basic recipe so why not do it on here, as it is somewhat low-carb depending on the pasta you use.

Brilliant Bacon & Courgette Pasta


Prep Time: 10 Minutes
Cooking Time: 15 Minutes
Total - 25 minutes
Makes 1 Portion (you can double it up)

Ingredients

  • 100g Smoked Bacon Lardons
  • ½ Onion Chopped, Finely
  • 2 Garlic Gloves, Sliced Thinly
  • ½ Courgette, Topped and Tailed
  • 2 Mushrooms, Wiped and Sliced
  • 1 Carrots, Peeled and Topped and Tailed
  • 10g English Extra Mature Cheddar, Grated
  • 50ml Crème Fraiche
  • 100g Spelt Pasta Shapes
  • Dried Mixed Herbs & Pepper

Equipment

  • 1 Large Chopping Board
  • 1 Sharp Knife
  • 1 Vegetable Peeler
  • 1 Saucepan
  • 1 Large Frying Pan or Wok
  • 1 Wooden Spoon
  • 1 colander

Method

1. Boil a large pan of water and cook the pasta shapes, following the pack instructions
2. Fry the bacon lardons & the onion in a large frying pan until golden brown, adding the garlic for the last minute or so.
3. Slice the courgette & carrot lengthways into quarters and cut into chunks. Add to the frying pan with the mushrooms and cook for a few minutes with the bacon and garlic until they are slightly softened.
4. Once the pasta is cooked, drain, and then put back into the pan. Add the crème Fraiche and the herbs, pepper and half of the grated cheese. Mix together
5. Gently fold the bacon mixture into the pasta, and serve with the rest of the cheese.

Nutrional Info

For this dish I calculated that this had about 40/50g of carbohydrate so for this, so for a Type 1 diabetic on a Short-Acting insulin Regime with 10g of carbohydrate to 1 unit of insulin, this would require 4 or 5 units of insulin, depending on which pasta you use.
