Hi everyone, a food post for a change a quick supper for an anytime 

  Grilled Veggie Macaroni

Preparation time: 5 Minutes
Cooking time: 18-20 Minutes
Total: 25 Minutes
 Serves: 1
 

Ingredients

  • 1 Large Tomato, Sliced
  • 100g Flagouet Beans, drained
  • 63g High Fibre Macaroni
  • 175g Fresh Cheese Sauce
  • Half a Bag of Fresh Spinach salad, roughly chopped
  • 2 Mushrooms, sliced
  • 1 tsp Olive Oil
  • Basil Leaves

Equipment

  • 1 Large Sauce Pan
  • 1 Frying pan
  • 1 Chopping Board & 1 Sharp Knife
  • 1 Wooden Spoon
  • 1 Baking Dish
  • 1 Colander

Method

  1. Boil a large saucepan of water and cook the macaroni for 10-12 minutes. Drain when cooked
  2. Fry the mushrooms in the frying pan, and set aside
  3. Place the pasta (once weighed to check carb content) back in the saucepan and mix in the cheese sauce. Season with black pepper and heat through
  4. Stir through the spinach, mushrooms & beans
  5. Pour into an ovenproof dish, placing the tomatoes on top with the basil and some more pepper and place under a pre-heated grill for 4-5 minutes until golden on top, serve immediately
