Bubble & Squeak

A food post! What happens with all the leftovers from the Christmas day, the food waste bin, no they can be made into Bubble & Squeak. The first time I had this was last year after my brothers family came to my parents and hardly eat anything (So annoying!) so instead of eating it cold me & mum made this! This could be served as lunch, brunch or supper.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Total: 30 minutes

Serves: 1 person

Ingredients 

  • 1 tbsp Olive Oil
  • 1/2 a packet of Bacon Lardons
  • 1/2 Onion, finely sliced 
  • 1 garlic clove, chopped 
  • 6 cooked Brussels sprouts, sliced, or leftover boiled cabbage, shredded
  • 200g cold leftover mashed potato, or cold crushed boiled potatoes 
  • 1 Egg fried to serve
  • Seasoning

Equipment

  • 1 Large Frying Pan
  • 1 Small Frying Pan
  • 1 Chopping Board & 1 Sharp Knife
  • 1 Wooden Spoon
  • 1 Spatula

Method 

  1. Heat the oil in a non-stick pan, allow it to get nice and hot, then add the bacon. As it begins to brown, add the onion and garlic.
  2. Next, add the sliced sprouts or cabbage and let it colour slightly & season with pepper. All this will take 5-6 minutes.
  3. Next, add the potato. Work everything together in the pan and push it down so that the mixture covers the base of the pan – allow the mixture to catch slightly on the base of the pan before turning it over and doing the same again. It’s the bits of potato that catch in the pan that define the term ‘bubble and squeak’, so be brave and let the mixture colour. Serve with a fried egg and seasoning
