Baileys French Toast

   Yesterday was my birthday, a lockdown birthday, I was going to spoil myself with a lovely breakfast or brunch! So this is it my birthday breakfast

 Serves 1
Prep Time: 5 minutes
Cooking Time: 20 minutes
Total time: 25 minutes

Ingredients 

  • 50ml Baileys Original Irish Cream
  • 1 Egg 
  • 15ml Milk 
  • 2 slices Brioche 
  • 20g Butter 
  • Clotted cream and loganberries to decorate

Equipment

  • Shallow dish or casserole dish
  • Whisk or fork
  • Medium frying fan 
  • Tongs

Method

  1. Beat the eggs, milk and Baileys together in the shallow dish or casserole dish.  Place the slices of brioche in the dish let it soak in for a couple of minutes.
  2. Melt the butter in a large frying pan over a medium heat. Then fry the brioche slices for around 2 mins or until golden on each side.
  3. Arrange the French toast on plates. Top with a generous dollop of clotted cream, handfuls of loganberries. Now, tuck in!

Nutrition

For this dish I calculated that this had about 80g of carbohydrate so for this, so for a Type 1 diabetic on a Short-Acting insulin Regime with 10g of carbohydrate to 1 unit of insulin, this would require 8 unit of insulin.
