Baileys French Toast
Yesterday was my birthday, a lockdown birthday, I was going to spoil myself with a lovely breakfast or brunch! So this is it my birthday breakfast
Ingredients
- 50ml Baileys Original Irish Cream
- 1 Egg
- 15ml Milk
- 2 Slices Brioche
- 20g Butter
- Clotted cream and Loganberries to decorate
Equipment
- Shallow dish or casserole dish
- Whisk or fork
- Medium frying fan
- Tongs
Method
- Beat the eggs, milk and Baileys together in the shallow dish or casserole dish. Place the slices of brioche in the dish let it soak in for a couple of minutes.
- Melt the butter in a large frying pan over a medium heat. Then fry the brioche slices for around 2 mins or until golden on each side.
- Arrange the French toast on plates. Top with a generous dollop of clotted cream, handfuls of loganberries. Now, tuck in!
Nutrition
For this dish I calculated that this had about 80g of carbohydrate so for this, so for a Type 1 diabetic on a Short-Acting insulin Regime with 10g of carbohydrate to 1 unit of insulin, this would require 8 unit of insulin.
