Speedy Pizza's
I have been going through during this lockdown period some of my old childhood cookery books as my parents are trying to get me to give them away - no way! I spotted this, I never made anything much from this book. I choose to do the speedy pizza's which is easy, you can use the things in your cupboard, for the toppings, if you don't have any of them which is great at this time.
Ingredients
For the base
- 150g Self Raising Flour
- Pinch of salt
- 40g Butter
- 3-4 tsp of Milk
- 50g Grated Cheese
For the tomato Sauce
- 1 Small Onion
- 200g Tin of Tomatoes
- 2 tsp of Tomato Puree
- 1 Pinch of Salt & Pepper
- 1 Pinch of Mixed Herbs
Toppings (for a clock face)
- 50g Grated Cheese
- 1/4 Green Pepper, Sliced
- 1 Sliced Hot Dog Sausage
- 4 1/2 Black Olives
Equipment
- 1 Chopping Board with a Sharp Knife
- 1 Small Saucepan
- 2 Wooden Spoons
- 1 Mixing Bowl
- 1 Table Knife
- Rolling Pin
- 1 Greased Baking Tray (one for pizza would be best)
Method
For the tomato Sauce
- Set the oven to 220°C/425°F/Gas Mark 7.
- Peel the onion then cut into half and chop it up finely, using the chopping board
- Put the chopped onion in the saucepan. Add the tomatoes, tomatoes puree and the salt and paper and stir the mixture
- Cook the mixture over a low heat for about 15 minutes stirring from time to time. Then turn off the heat and let it cool.
For the base
- While the sauce is cooking, make the pizza dough. Put the flour, salt and butter in the mixing bowl. Cut the butter into small pieces.
- Rub the pieces of butter into the flour between your fingers and thumbs until the mixture looks like breadcrumbs
- Add the grated cheese and milk to the mixture. mix everything together until you have a smooth ball of dough
- Divide the dough into two and make each into a ball. Roll each ball of dough into a circular shape about 10cm (4 in) across
Assembling your pizza
- Lay your circles of dough on a greased baking tray. Spoon the tomato sauce on them spreading it out evenly to the edges.
- decorate the pizza's with any design you like, I have chosen the clock from the book, but you can do them in any design you like.
- Put them in the oven to cook for 15-20 minutes until the edges are golden brown
Nutrition
For this dish I calculated that this had about 66g of carbohydrate so for this, so for a Type 1 diabetic on a Short-Acting insulin Regime with 10g of carbohydrate to 1 unit of insulin, this would require 6 or 7 unit of insulin.
