Eggy Cheese Crumpets

Hi everyone, how are we doing? I have recently struggled to get some recipes written down and cooked, as now things have picked up to somewhat normal and back probably down again, doing recipes have taken a back seat, but I did have time to make this one, Eggy cheesy Crumpets sort of like Eggy Bread but with crumpets and cheese on the top, so like eggy cheese on toast. I have also tried my new backgrounds that I reviewed here, they are are great :)

Cooking Time: 12 Minutes
Total time: 14 Minutes

Ingredients

    • 2 Eggs
    • 25ml Milk
    • 2 Crumpets
    • 125g Cherry Tomatoes
    • Drizzle of Vegetable Oil
    • 20g Grated Cheddar
    • 1 Avocado Sliced

    Equipment

    •  Shallow Bowl or Casserole Dish
    • Whisk
    • Baking Tray
    • Frying Pan
    • Chopping Board & Knife

       Method

        1. Heat the grill. Beat the eggs and milk together in a wide dish. Submerge the crumpets in the egg mixture, turning them once, then set aside for a few minutes.
        2. Arrange the tomatoes cut-side up on a baking tray and grill for a few minutes, then cover the tray with foil to keep the tomatoes warm.

        3. Heat the oil in a frying pan and cook the crumpets for a few minutes on each side until the egg has set – you may have to do this in batches. Transfer them to a baking tray as you go. Once all the crumpets are cooked, top with the cheese and grill for 1-2 mins until the cheese is bubbling and golden. Serve with the tomatoes and avocado slices.

          For this dish I calculated that this had about 40g of carbohydrate so for this, so for a Type 1 diabetic on a Short-Acting insulin Regime with 10g of carbohydrate to 1 unit of insulin, this would require 4 unit of insulin.
